Serves 10 servings
Ingredients for the Clementine Syrup (makes 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
For the Cocktail (makes 850ml, serving 10)
400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, to finish
Method
Making the Citrus Syrup: Combine every components inside a pan, heat until it reaches a simmer, mixing until the sugar dissolves. After that, remove from the heat and leave to reach room temperature entirely. Transfer to a clean bottle, close it and refrigerate it chilled, where it will keep for up to one month.
Preparing the Premix: Pour the specified liquids into one sizeable container, let it rest for 60 minutes, then strain preferably using muslin, so it's completely strained.
When ready to serve: Add 85ml from the cocktail base into a stirring glass containing ice, and agitate lightly for a minute to cool it down. Pour to a chilled martini glass or a similar vessel, top with the cranberries and finish with a brief mist with the mandarin essence over the top.
